This new honey processed Ethiopia is terrific. Its sweet mildness perfectly expresses the Guji region of Ethiopia. Sourced from the Haro Wachu washing station, it has the delightful acidity characteristic to most African coffees, but is offset by a honey-like sweetness. While roasting this coffee, we aimed to highlight the honey processed natural sugars while taming the acidity. We think it’s pretty spot on, and taste soft notes of lemon, honey, oolong tea, and hints of floral.
