This smooth Peruvian coffee is a classic with notes of chocolate and citrus.
What really sets this coffee apart from others is the process it undergoes to become decaf. Unlike other decaf coffees which are soaked in chemicals to draw out the caffeine, our Peru is decaffeinated using the Swiss Water Method. Coffee farmers soak the green beans in clean water. Over a period of time, the caffeine and other water soluble compounds are drawn out of the bean and into the water. The water is then run through an activated charcoal filtration system to filter out the caffeine. The water and all other compounds except the caffeine are reintroduced to the green coffee beans. Then they are dried down to an appropriate moisture for transport and roasting.
