The shortest, best season of the year deserves some celebrating. These beautiful fall days make me feel Grateful. Grateful to feel the warm sunshine and cool air on my walk, grateful for the bright yellow mum on my porch, (surprise of all surprises, its turning purple!) and grateful for the last few vegetables from the garden.
I dug the most beautiful potatoes for supper. Yukon gold & the prettiest purple sweet potato you’ve ever seen. I roasted them up with the last of the season’s zucchini and green beans, tossed in some fresh oregano and thyme, and wow. It was delicious.
I had picked some apples with my friend from a neighbor’s tree, and I’ve loved looking at them on my counter. It’s fall, after all. But recently they’ve been staring at me, wanting to be used. Tonight was the night. I made an apple crisp, just a simple recipe. Cody brewed some americanos with our freshly roasted decaf Peru. A clean, chemical-free decaf at that. Something about topping off a perfect fall day with a bowl of cinnamony crisp and a cup of truly amazing coffee made me wanna cry. Not really. But almost. It was that good.
